Sticky Buns--Grain Free and Gluten Free


This morning I made sticky buns from Grain-Free Foodies.  They received 5 double thumbs up, the highest rating in our household.  I have been on a roll with good recipes!  These delicious buns had a light cake-like consistency and the caramel/nut topping was yummy ooey-gooey.  They took awhile to make so next time I will mix all the dry ingredients and wet ingredients separately the night before.  All I will have to do in the morning is combine and bake. 

I substituted canned pumpkin for banana and added a little stevia to make up for the difference in sweetness.  I also used solid coconut oil for butter because of Griffin's dairy sensitivity.





The downside is they made a mess and did not come out in one piece.  I am hoping to get silicone muffin molds for Christmas and that will solve the "sticking to the pan" problem.  The recipe says to not use paper liners, but I'd much rather have them stick to the paper than my muffin tin.  What a mess!  Also, the caramel/nut topping melted and overflowed.  I now have to clean my oven.  Next time I will put a foiled lined pan underneath to catch the excess or add the topping mid way through the baking.
