Easy Chinese Chicken

I think I've found a recipe to replace those darn Chicken Nugget Happy Meals.  There's no dipping involved, but bite-sized honey mustard marinaded chicken is a good substitute for the processed chicken parts with MSG .... I mean.... uh, honey mustard sauce.  Besides, "bite-size" always goes over better with the kiddos.  Miniature food for some reason is more fun.




I especially  like this recipe because it is easy and fast.  The marinade is a snap using just a few ingredients you may already have on hand.  The chicken is cooked in just a few minutes under the broiler and voila!  Dinner is served.

Fried Rice is an excellent side and perhaps some steamed sugar snap peas.  For the fried rice I use brown rice instead of white and tamari sauce, which is wheat free soy sauce (yes, regular soy sauce has wheat in it).
