Winner! Winner! Chicken Dinner! Ok, so it's not a chicken dinner. It's a beef dinner, a hot dog dinner to be exact. We're not talking gourmet here. We're talking a crowd pleasing, kid-friendly recipe that you can serve (ah-hem, Super Bowl) to all your guests and family, knowing that everyone can partake in these tasty treats, even those who have gluten and dairy allergies.
Double thumbs up all the way around the table tonight. I could not get them on the plates fast enough. Lots of "more, please!"
These little gems were really simple to make and start to finish took about 20 minutes.
Applegate Farms All Beef Uncured Hot Dogs
Elana Pantry's Almond Flour Biscuit Dough
Preheat oven to 350.
Make dough and roll out to 1/4" thick. Using a pizza cutter cut 2" wide strips. Cut hot dogs in half. Roll them up and place on a cookie sheet greased or lined with parchment paper.
Bake for 15-20 minutes or until biscuit is golden brown and cooked through.

I had never actually had pigs in a blanket until a couple of months ago. I have NO idea how I managed that, but omg those things are sinfully good. I don't have a gluten allergy, so I generally would cheat and use crescent rolls, but I love the idea :)

I have also been making my family gluten free dinners and they have been great. I know my kids will love these and I have to try them ASAP! I eat gluten free, so I'm always looking for more ideas. Haven't had these in years although I used to enjoy them. Never thought about using biscuit dough, so I'll have to try that. Thanks for the recipe.
