Mini Cherry Lime "Cheese"cakes

Every week From My Tiny Kitchen, Delightful Country Cookin', and Moms Crazy Cooking team up to host a recipe swap called This Week's Cravings.   They assign a special ingredient for each party (there's a list on her site if you'd like to participate). 

On February 21st, in celebration of Geroge Washington's birthday, we will be sharing cherry recipes. 

Here is my yummy entry:





The basic recipe for these dairy free mini-cheesecakes comes from Lexie's Kitchen. Since I found out that soaked, pureed cashews can substitute for dairy in recipes such as pudding, I have been utterly fascinated.  It's like magic to me and when I come across a recipe that uses this technique, I bookmark it.

When I discovered Alexa's recipe, I knew it would be perfect for This Week's Cravings.  I only made two changes. I used frozen and thawed cherries in place of strawberries and almonds for the macadamia nuts.  I added a little Coconut Whipped Cream and a cherry on top to make it pretty.  Ta-da!  So easy!  Truly, for I cannot tell a lie!  I understand if you'd like to give me the "gong" right about now......or should I say "axe"? 

The 1/3 cup of lime juice makes this "cheese"cake very limey.  Hence the name.

By the way, in the search for cherries in the middle of winter, I came across natural maraschino cherries with no artificial ingredients or dyes.  Good to know the next time I want to make the kids sundaes!
