Rice Krispies Treats Made Healthier



Marshmallow Week at The Nourishing Homemaker:
Each day this week I am going to post a recipe using Homemade Naturally Sweetened Marshmallows.  Monday, I posted the recipe for the marshmallows.  Tuesday was  Gluten Free & Dairy Free S'mores.  Stay tuned- I have lots of fun recipes planned!




Rice Krsipies Treats is a family favorite.   Simple to make and with just a few ingredients, it is the perfect snack to prepare with your little sous-chefs.  I don't know about your children, but they have a pretty limited attention span.  Uncomplicated recipes are a must if I want them to keep me company in the kitchen.

some cereal in them.  What big helpers!

This healthier and gluten free recipe is adapted from The Original Rice Krispies Treats.  I chose Enjoy Life Crunchy Rice Cereal because it is gluten free, dairy free, and corn free.  I went to Enjoy Life's website and they were very thorough with the explanation of their allergy policy.  

Griffin, pictured above, is allergic to corn so we have to be so careful.  Companies do not have to list "corn" as an ingredient.  Several chemicals and sweeteners are processed using corn.  Any of the following ingredients may contain corn:  citric acid, sodium citrate, maltodextrin, dextrose, fructose, malt, mono-glycerides, MSG, sorbitol, and xanthan gum.  This is not even a complete list!  Tricky, isn't it?!

A warning:  Kellogg's Rice Krispies Cereal contains malt (gluten and corn = a double no for us), so it is NOT gluten free.  Some other gluten free choices, besides Enjoy Life, are Erewhon Crispy Brown Rice Cereal and Nature's Path Organic Crispy Rice Cereal.  I have not confirmed with the companies that these are gluten free (or corn free).  By regulation, a food can have a certain percentage of gluten and be labeled "gluten free."  Never take someone's word for it when they say something is allergy free (this includes me).  Contact the company directly.  When in doubt, don't eat it.


1 small box crispy rice cereal
3 Tbsp coconut oil

In a medium sauce pan melt coconut oil over low heat and slowly stir in marshmallows.  Once marshmallows  have melted, add cereal and combine.  Pour into 8X8 baking pan and chill in fridge for 1 hour.  Cut into squares.  Store in the fridge.


They even do dishes!
